An ancient "super fruit" celebrated for its health benefits. Elderberries are rich in flavonoids (anthocyanins) that give the berries their characteristic deep purple hue and contribute to their high antioxidant content. Both the flowers and berries are used for baking and making wine, syrups, jellies, vinegar, candy, sauces, tinctures, supplements, teas, and even dyes. Caution: Berries must be cooked before they are safe to consume. Flowers can be eaten raw or cooked.
